Chocolate Flavoured Much Better Protein Snacks Now Available

I recently ordered some chocolate delicious protein to make the Much Better Protein Bars. I think they will be a big hit! It is the same great recipe with the only change being the chocolate protein instead of vanilla.

I tried some with raspberries last week and found them to be very tasty, but not sure they would last as long with the raspberries in them, so wanted to make a more sustainable bar. This was a wise decision as so many people like chocolate.

Carrot Souffle

I was recently asked to make something for a get together with a big group of friends of which I had never attempted. The dish was quite easy to make and turn out to be a great tasting side dish. Since my gut doesn't like salad very well, we sometimes struggle with side dishes, so this will be part of our new repertoire.

I made a carrot souffle. I have never tried a souffle before and was a bit nervous until I read the recipe http://allrecipes.com/recipe/carrot-souffle-4/

1kg of carrots
1/2c coconut oil (melted)
1/4c coconut flour (I used almond flour)
2T lemon juice
1T vanilla extract
1T honey
1T nutmeg
1 1/2t cinnamon
1 1/2t baking soda
1/2t salt
4 eggs (at room temperature)

1. Pre heat oven 175C

2. I steamed the carrots after cutting them into chunks in a big pot. About 30 minutes.

3. Grease a 2.5L casserole dish with a little coconut oil.

4. Place the carrots in a bowl with the remaining ingredients - EXCEPT eggs and blend.

Using a stick blender instead of food processor.
5. Blend eggs in one at a time.

6. Use a rubber scrapper to put carrot mixture into your greased casserole dish.

7. Bake in oven for 45-60 minutes until the top is golden brown.

Finished product
A delicious side dish to go along with chicken or turkey. For those American friends it may remind you of pumpkin pie without the crust as it has similar smell and look.

What flavour would like to to try?

At the moment, I have only been making the Much Better Protein Bars with vanilla protein. I had a suggestion from a friend I should try putting some raspberries in them, or making some with a chocolate protein powder.

What flavour would you like to try? Please make any suggestions in the comments area and I will see what I can do.

This sounded interesting, so today I experimented with the raspberries. The raspberries stuck to the baking pan a bit with one bar falling apart because of the stuck raspberries. I will get back to you on the taste as I already had my one MBPB snack for today and will have to save the new one for tomorrow.

Also, wanted to let you know they freeze well, so if you want to buy a bigger amount, you can do so without feeling they will go bad. Just put them in the freezer. If you take one out the night before you want to eat it, it should be defrosted nicely for the next day.

What is the Much Better Protein Bar?

I've been involved with coming up with some different snacks for people to have between meals in the past. I was introduced to a recipe for some protein bars.

I made these for almost a year for my wife and I, but went without them when we were living in the Netherlands earlier this year. I realised how much I missed them when I came back. I enjoy them so much and enjoy cooking that I thought I would share them with others.

What I've come up with is a version I have made for my wife and myself for a while with some changes in protein input and the amount of sweetener used. This current version has 180 protein, whey vanilla protein, almond meal, walnuts, almonds, egg, honey, sunflower seeds, pine nuts, water.
